Goods on Credit? Who Still Owes Me?

Selling on credit still happens, but I'm curious how consistent it is across different areas. In my area, when a customer takes goods and agrees to pay later, the trader just remembers or writes it somewhere. Is it the same where you are, or does it work differently? How often do disagreements happen about how much someone owes?
